The course describes the significance of oxygen and nitrogen derivatives in the human body in normal physiological processes and in cases of pathologies; characterization of antioxidants and their presence in the organism. Particular diseases, the origin and/or the course of which are closely connected with free radicals or active oxygen and nitrogen forms, will be examined during the course. The students will learn about antioxidants in food and beverages and about the efficiency of antioxidative food additives and microelements, and the necessity to control the use of antioxidants. The students will learn how to determine metabolites of lipid peroxidation processes and antioxidative enzymes and microelements in the blood.
